Classic Oatmeal Sandwich Cookies

There’s nothing like a good recipe to take you down Memory Lane. These classic oatmeal cookies will take you back to the good old days when you came home after a long day, ripped open a pack of Lil Debbie Oatmeal Sandwich Cookies, and snacked away at those heavenly sweets. Well, now these cookies can be freshly baked right at home! Who wouldn’t want more of that sweet, rich cream filling sandwiched between two soft, chewy oatmeal cookies? Let's get started!


Oatmeal Sandwich Cookies:


Prep Time ~ 15 min

Total Time ~ 25 min

Servings ~ 12 min


Ingredients:


Oatmeal Cookies:

  • ½ cup butter, room temperature

  • ¾ cup brown sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 ¼ cups flour

  • 1 ½ cups oats

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ tsp cinnamon

Marshmallow Filling:

  • ½ cup butter, room temperature

  • 7 oz marshmallow creme

  • 3 cups powdered sugar

  • 1 tsp vanilla

Directions:

Preheat the oven to 375 degrees and prepare cookie sheet with parchment paper or aluminum foil. Cream together the butter and brown sugar until light and fluffy, about five minutes. Then add the egg and vanilla. In another bowl, whisk together flour, oats, baking soda, salt, and cinnamon. Slowly add them to the butter mixture. Mix until just combined. Use an ice cream scoop to drop dough balls onto the parchment-lined cookie sheet. If you do not have an ice cream scoop, make them into tablespoon-sized balls. Bake for 8 to 10 minutes. Let cool completely on a cooling rack.


Make the filling by creaming together the butter and marshmallow creme. Slowly add the powdered sugar and vanilla. Beat until smooth and fluffy. Add a generous scoop of filling on top of half of the cookies. Add another cookie to the top and press down gently. Serve or store in an airtight container for up to one week.


Notes:

The cookies might not expand that much when baking, so if you want a wider cookie, I suggest flattening them down before placing them in the oven. You can also add more or less cinnamon to your preferred taste. I added one tsp instead of a half and loved the extra hint of cinnamon, but that's my taste and not necessarily needed. These are great to snack on if you aren’t looking for something too sweet. Paired with either a glass of milk or some coffee, these are sure to bring back memories while you relax the rest of the day.
