Heavenly Cheesy Garlic Bites

Hello everyone. Welcome back to A Dash Of Donnie. I’m your head chef, Donnie Eniram, alongside my lovely co-host, Eve Romano. This week, we’re making one of my favorite things to bake: Cheesy Garlic Bread Bites. I personally love to use my pizza dough recipe for this dish just by preference, but it can be done in this simple, easy way of just using refrigerated biscuit dough or pizza dough. These easy Cheesy Garlic bread bites are the perfect accompaniment to any dish or perfect just by themselves. The smell of these baking in the oven is a sure way to get your mouth watering. Combining two of the most amazing flavors of cheesiness and garlicky goodness, these bread bites are heaven on earth. I have my pizza dough alongside using the store-bought dough in this recipe. Now, the from-scratch dough does take longer if you're feeling adventurous, but it's all up to you. With that said, let's get baking.


Cheesy Garlic Bites:

Dough from Scratch:

Prep Time: 15 minutes

Cook Time: 15 minutes

Rising Time: 30 minutes

Total Time: 1 hour


Refrigerated Dough:

Prep Time: 5 mins

Cook Time: 15 mins

Total Time: 20 mins


Pizza Dough from Scratch:

  • 2-2 ⅓ cups all-purpose flour OR bread flour divided

  • 1 packet instant yeast (2 ¼ tsp)

  • 1 ½ teaspoons sugar

  • ¾ teaspoon salt

  • ⅛ - ¼ teaspoon garlic powder and/or dried basil leaves (optional)

  • 2 Tablespoons olive oil + additional

  • ¾ cup warm water (175ml)

Refrigerated Dough:

  • 1 can refrigerated biscuits or pizza dough

  • ½ cup shredded mozzarella

  • 3 tbsp unsalted butter, melted

  • ½ tsp garlic powder

  • ½ tsp Italian seasoning

  • ½ tbsp grated parmesan cheese


Directions:


Dough from Scratch:

Combine 1 cup (125g) of flour, instant yeast, sugar, and salt in a large bowl. If desired, add garlic powder and dried basil at this point as well. Add olive oil and warm water and use a wooden spoon to stir very well. Gradually add another 1 cup (125g) of flour. Add any additional flour as needed (I've found that sometimes I need as much as an additional ⅓ cup), stirring until the dough is forming into a cohesive, elastic ball and is beginning to pull away from the sides of the bowl (see video above recipe for visual cue). The dough will still be slightly sticky but still should be manageable with your hands. Drizzle a separate, large, clean bowl generously with olive oil and use a pastry brush to brush up the sides of the bowl. Lightly dust your hands with flour and form your pizza dough into a round ball and transfer to your olive oil-brushed bowl. Use your hands to roll the pizza dough along the inside of the bowl until it is coated in olive oil, then cover the bowl tightly with plastic wrap and place it in a warm place. Allow dough to rise for 30 minutes or until doubled in size. Once the dough has risen, use your hands to gently deflate it and transfer to a lightly floured surface and knead briefly until smooth (about 3-5 times).


Garlic Butter:

Combine the melted butter, garlic powder, Italian seasoning, and parmesan cheese in a small bowl. Add extra if needed.


Assembling:

Preheat the oven to 350°F. Butter or spray non-stick baking spray onto a baking sheet. Separate dough into 12 equally divided pieces onto the pan and then place the cheese on top. Pinch the four corners in so that the cheese is hidden and roll into a ball. Then place on a baking sheet seam side down. Brush the tops with seasoned melted butter. Bake for 12 to 15 minutes, or until the rolls are golden brown and cooked through the center. When the rolls come out, brush the tops with the seasoned melted butter once more. Best served while they’re hot but can be stored in an airtight container for another day.
